    Using the famous culinary triangle theorized by Claude Lévi-Strauss, this paper tries to determine the place of the raw in the Japanese culinary model and to understand how it became so iconic. For this purpose, the research focuses on the relationship with the “milieu” and concentrates on cultural explanations and historical evolution of modes of preparation and flavors. It appears that the primary purpose of the gastronomic process in Japan is to reveal the natural taste of food that will accompany rice. All modes of preparation and presentation tend towards this goal, for high cuisine but also for most traditional dishes. We conclude that the raw is not perceived to be a non-cultural product, but is simultaneously the starting and the ending point for the process of cultural appropriation of food.

    Our research aims to consider the act of drinking and eating as a fundamentally cultural practice : we examine how the Japanese imagine the food spaces where we eat in the broadest sense of the term from the family table to restaurants and for them what their values are at the bottom of Japanese mentality.
    The most important result consists in having noticed the primordial link of each guest with nature in the Japanese meal; the human relationship between eaters is only the consequence. On the contrary, in France as in other western countries, commensality first intensifies the human bond between eaters, hence the idea of conviviality. The food space of the Japanese is characterized by its naturalness while that of the French by sociability. However, it should not be forgotten that the tendency towards naturalness of the Japanese is only realized by a strict choice of ingredients more natural, a subtle refinement of preparatory techniques and many other hand-held masters.

    On the whole of our research during the year, the basis of the method of the interdisciplinary cultural sciences has been defined well.
    Fukuda deepened the survey of the wine acceptance in Japan and in France in collaboration of the professor-researchers of the geography of the food to the university Paris-Sorbonne and organized with them the symposium "Men, landscapes and practices of wine at the Maison Franco-Japanaise in Tokyo December 13-14 2013. Kamio adapted the theory of the social systems of sociologist Niklas Luhmann well to analyse the society of Japanese internet and put in evidence the modes of the desire of the young Japanese to bind with others.
    By these studies of the cultural phenomena in the daily life, we made clearer what is the interdisciplinary cultural sciences and its method.

    Each member examined modern eating/driking habits as cultural phenomena from the perspective of his specialized field.
    From an interdisciplinary point of view, Fukuda studied the concept of convivial eating/drinking that exists in Japan and France. He examined how this concept is represented in Japanese and French literature and discovered how the pleasure of the competing concept of solitary eating/drinking has developed in the two countries.
    Kamio analyzed Tim Burton's film Charlie and the Chocolate Factory (2005), which was based on Roald Dahl's novel with the same title (1964). In the original novel, sexual connotation of chocolate was suppressed, but it came to the fore in the film. We studied how this had been done with special reference to different representations of chocolate in the two media.
    Kuwano compared the representations of eating/drinking in Russian avant-gardism and socialist realism, and reconfirmed that Russian avant-gardists have little interest in the matter because of their view of the world, whereas an image of good harvest is being fabricated in socialist realism.
    Goto showed that the image of cannibalism in Latin America has transformed into the present image of post colonialism owing to interactions between Latin America and Europe.
    Takahashi examined the concept of hospitality as a key to social change, which offers a new perspective for viewing human beings and Lebenswelt'life world' He is now studying a philosophical basis of this concept.
    Hara critically analyzed representations of eating habit in the 20th-century America from the viewpoints of mass production/consumption culture and family ideology, compared with the cliche "mother's cooking," which was his starting point.
    These interdisciplinary studies have shown problems associated with eating/drinking in the modern world..

  • 日仏の「自然派」ワイン言説とその社会的表象にみる「再自然化」

    自然派ワインのフランスにおける基礎文献を取集し、その読解をすすめた。これによって、1)1980年代に有機醸造と有機栽培の先駆的事例があったこと、2)その後、有機農産物認定の制度確立により有機栽培ぶどうによるワインが制度的認定を受けたこと3)有機認定制度が有機栽培を重視していたために、有機醸造によるいわゆる「自然派」ワインが2000年代以降、徐々に広がったことがわかった。また、日本においては、2000年代後半になって、有機ワインと「自然派」ワインとほぼ同時に消費市場に広まり、日本の新しいワイン生産にも一定の影響をあたえている。「自然派」ワインのひろがりは、自然を積極的に取り戻そうとする「再自然化」の典型例である。
